Exceptional food has long been associated with a narrow set of spaces: restaurants, hotels, and invitation-only tables. Gaiama was created from the belief that experiences of this quality can exist beyond those spaces, shared more openly in places that bring people closer to food, culture, and one another.
We create chef-led dining experiences in extraordinary locations, across residencies, brand collaborations, and destination-led gatherings. Each experience is shaped by its setting, whether on a rooftop during Cannes Lions, around a communal table on the Sri Lankan coast, or alongside local producers and craftspeople in the Australian wine region.
Our approach combines the emotional depth of hospitality with the precision required to deliver complex gatherings around the world. We believe great hosting is felt in the details: the pacing of an evening, the generosity of service, the relationship between food and place, and the atmosphere created when people feel genuinely welcomed.
Led by founder Éloïse Mercier-Fox, Gaiama draws on more than two decades of experience across luxury hospitality, food, and international event production. Working alongside chefs, artisans, destinations, and hospitality partners around the world, we create gatherings that bring people closer to the cultures, landscapes, and traditions shaping what they eat and share.

Eloïse Mercier-Fox is the founder of Gaiama, bringing together a background in luxury hospitality, food culture, and international event production. Having lived, worked, and travelled extensively around the world, her perspective is shaped by a deep curiosity for how people gather, eat, and connect across cultures.
Before launching Gaiama, she spent more than 15 years creating international programmes and activations for brands including Amazon, American Express, Belmond, Estée Lauder, Gucci, HBO, Live Nation, Lamborghini, and Qantas, spanning everything from private dinners and influencer retreats to large-scale cultural moments. Highlights include leading guest programmes during Cannes Lions, producing executive dinners with globally recognised chefs, and overseeing brand hospitality around major international events including Monterey Car Week and CES.

Attila has always been driven by a curiosity to understand how things work. Originally pursuing a career in architecture and product design, he studied Mechatronics at the University of Leeds, where he launched his first events business before graduating.
Over the past 30 years, Attila has produced and activated events across the globe, working with A-list talent, world-renowned brands, and influential business leaders. His passion for creating extraordinary experiences has taken him to some of the world's most unique venues and destinations.
In 2005, Attila founded DesignScene, growing the company from a startup agency into an international business with offices in London, New York, Las Vegas, and Singapore. Much of this success has been driven by his passion for exploring new cultures and constantly seeking fresh inspiration from around the world, including discovering exceptional food !
Throughout his career, Attila has helped deliver unforgettable dining experiences, from intimate chef-led events to spectacular productions featuring Michelin-starred talent. These experiences inspired the vision behind Gaiama: making transformative, once-in-a-lifetime immersive dining experiences accessible to a wider audience.
Today, Attila remains deeply involved in DesignScene's most ambitious projects, continually pushing the boundaries of immersive entertainment and experiential storytelling. With Gaiama, he is bringing together decades of expertise in live events, hospitality, and innovation to create a new generation of immersive dining experiences.

Michelle
Keskin
Operations Advisor
Michelle Keskin’s early years were shaped by horticulture, having grown up within a botanical garden environment. Spending countless hours in greenhouses alongside plantsmen gave her an early appreciation for provenance, seasonality, and the care involved in cultivating both food and ornamental plants. This early exposure shaped a lasting understanding of the relationship between nature, craftsmanship, and quality.
Following a creative education, Michelle began her career within the premium food retail sector in the UK. During this time, she developed a strong understanding of provenance, traceability, and the standards required across the food supply chain. The experience further reinforced her belief in the importance of knowing where products come from and the stories behind them.
Michelle later moved into an international role overseeing the delivery of retail environments across global markets. Her work focused on shaping spaces that balanced brand identity with the cultural nuances of each location, from aesthetic direction to customer experience and product offering.
After years closely connected to the evolution of DesignScene, Michelle formally joined the business in 2017, taking on a strategic and operational leadership role.
Her involvement in Gaiama brings together longstanding interests in food provenance, hospitality, travel, and thoughtful guest experiences.
